Learning Outcome 1: PASS

You demonstrated a sound understanding of the role and development of food and beverage management. You applied the Kingston Manor case throughout and addressed all four Assessment Criteria.

Your strongest section was AC 1.3, where you connected cost control, consistency, dietary requirements, sustainability and personalised menus to operational consequences. Your discussion of customer experience also showed how quality, presentation and service can affect satisfaction, reviews and repeat business.

To improve future work, use shorter and more structured paragraphs, proofread carefully, and support analytical points with more specific management practices. For example, when discussing consistency or cost control, explain the processes management could use and the likely effects of those processes.

Learning Outcome 2: REFERRED
AC 2.1 — Produce a professionally formatted and cost-effective menu within budget constraints (Section 2). The menu is coherent and well structured across starter, main, dessert, and beverage, with dish descriptions, dietary options, and portion notes suited to a boutique garden dinner. The dishes are generically tropical rather than distinctively Jamaican, which sits oddly against the "Flavors of Jamaica" title, but a cost-effective, event-appropriate menu is produced. Met. (PASS)

AC 2.2 — Critically analyse and justify menu choices using market and customer analysis (Sections 1 and 4). You justify the menu against the guest profile, Kingston Manor's positioning, and current trends in sustainability, health, and experiential dining. The justification is relevant but largely descriptive rather than critical, and the claimed Jamaican cultural angle is asserted but not delivered through the dishes themselves. Met. (PASS)

AC 2.3 — Apply pricing strategies and perform cost analysis (Section 3). The pricing strategy is applied correctly: a 30 percent food cost gives a selling price of $55 from a $16.50 food cost. The cost analysis itself is not reliable. The per-portion "allowance for preparation, seasoning, and waste" is an unexplained figure that exceeds the ingredient cost in every dish and reverse-engineers each portion to a round number; the beverage line lists hibiscus tea at $7 per kg but calculates it at $10; and the financial totals do not reconcile, with gross profit shown as $1,550 in one section and $1,540 in another (the correct figure is $1,540), while the presentation states total food cost as $600 against the report's $660 (the correct figure is $660). The currency is also never stated. Not met. (REFERRED)

AC 2.4 — Present the menu professionally and effectively, addressing questions and feedback (Section 5, presentation, oral Q&A). The guest-facing menu layout is clean and the 11-slide presentation is organised and professional. The oral Q&A is assessed live and is not in these files; note that the presentation's financial slide carries the same costing errors as the report. Met on the written and slide evidence; oral assessed separately. (PASS)

Overall: the menu, the market justification, and the presentation are at a pass standard, but the unit is referred on the cost analysis. The pricing method is sound, yet the costing contains an arbitrary preparation allowance, a unit-cost slip, and financial totals that contradict each other across the report and the presentation. Because LO2 requires all criteria to be demonstrated, the costing must be corrected and reconciled to one consistent set of figures before this can pass. The fix is focused and straightforward.

Learning Outcome 3: PASS
AC 3.1 — Develop a comprehensive food safety plan with regulatory compliance. Cites Ministry of Health requirements and food-handler certification, maps hazards and controls across the chain, and is backed by a full HACCP table, a costed professional menu, and a financial review. Met. (PASS)

AC 3.2 — Demonstrate practical application and adherence to food safety standards. The practicum demonstrated food safety application to a strong standard. Met. (PASS)

AC 3.3 — Develop customer service strategies aligned with the concept. Layout, staffing structure, multi-course service flow, and formal dining etiquette are well matched to the boutique positioning. Met. (PASS)

AC 3.4 — Reflect on the impact of food safety on satisfaction and operations. The reflective assessment works through clear trade-offs, including hygiene cost, allergen reconfirmation time, and waste-monitoring burden. Met. (PASS)

Overall: food safety plan, HACCP table, service strategy, reflection, costed menu, and financial review are all sound, and the practicum was well executed. The unit is a pass. (PASS)

Learning Outcome 4: PASS
AC 4.1 — Design comprehensive beverage menus. Full beverage menu with a sorrel-based signature, wine pairings tied to the protein options, and inclusive non-alcoholic choices, each justified. Move responsible service into the beverage programme where it belongs. Met. (PASS)

AC 4.2 — Demonstrate FOH and BOH operations, staffing, and food service skills. FOH and BOH roles, staffing strategy, and service skills are set out, though the staff count differs between sections (eight versus nine). Addressed in writing and confirmed at the individual oral defense. (PASS)

AC 4.3 — Develop and implement marketing plans, including social media and loyalty. Thorough: positioning, channels, a pre, during, and post content strategy, performance measures, and loyalty mechanisms, with a mockups appendix. Met. (PASS)

AC 4.4 — Evaluate and implement appropriate technology solutions. The design document lists tools and value added; the evaluation document adds limitations and a recommendation for manual backup systems, meeting the evaluative standard. Met. (PASS)

Overall: all four criteria are met across the design and evaluation documents. Two small fixes only: move responsible service into the beverage programme and reconcile the staff count. (PASS)

Comments

You have demonstrated partial understanding of the required concepts; however, you have not fully meet criteria for a pass this time. You must resit all learning outcome/s you did not pass.
